I think the 8 sided die is a good idea I guess maybe the owner of the deck chooses his side first, then it goes counter clockwise from there (just because it has to be weird in some way) and you choose sides until everyone has chosen a side. If there are sides left over then you re-roll until a winner is chosen. After this the game goes as normal
